VitaPlus+ Mediterranean Quinoa Salad with Mixed Grain

First, cook Organic Vitaplus+ Quinoa Grains following the instruction: Wash quinoa and cook into boiling water using two parts water to one part grain. Add salt and reserve.

Ingredients for Salad


  • 1 cup thinly diced cucumbers

  • 1 cup halved cherry tomatoes

  • ½ cup diced yellow bell pepper

  • ¼ cup minced red onion

  • ½ cup crumbled feta (vegan) cheese

  • ¼ cup sliced black olives

  • 2 tablespoons toasted pine nuts

  • 2 tablespoons chopped parsley

How to prepare the dressing


Combine all of these ingredients in a jar and shake vigorously.

  • ¼ cup olive oil

  • 1 teaspoon Dijon mustard

  • 2 tablespoons apple vinegar

  • 1 tablespoon lemon juice

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • ½ teaspoon dried oregano

  • salt and pepper to taste
